Do you ship to the Netherlands and Germany?
Yes. We ship with DPD from our warehouse in the Netherlands. Shipping is free from €59 in the Netherlands and €79 in Germany. Below those amounts, shipping costs are shown in your basket before checkout. We do not currently ship to other countries.
How quickly will my order arrive?
Orders placed on working days leave the same or the next working day. Delivery usually takes 1–2 working days in the Netherlands and 2–4 in Germany. We email a tracking link when the parcel is registered.
Can I return a knife?
Yes. You have a 30-day returns period from receipt. Return the knife unused in its original packaging for a full refund of its purchase price. A used knife cannot be sold as new for hygiene reasons, so we deduct any loss in value. Register your return by email and we will send instructions. The full returns policy explains the statutory withdrawal period and the conditions of our additional returns guarantee.
What warranty do I receive?
All knives carry a two-year manufacturer’s warranty against material and manufacturing defects, such as a loose handle or a crack in the blade. Normal wear, a dull edge, rust marks from leaving the knife wet, dishwasher damage and misuse are excluded. Send a photograph and order number with your complaint so we can resolve it.
Can the knives go in the dishwasher?
No. Hot water and aggressive detergent dull the edge, damage the handle and allow the knife to knock against other cutlery. Hand washing takes only moments: warm water, a little washing-up liquid, then dry immediately. This applies to every range, including Pro and Classic with plastic handles.
How do I sharpen my knife?
A few weekly passes on a honing steel at about 15–20 degrees keep the edge aligned. If it is truly blunt, use a 1000/3000-grit whetstone at the same angle, working both sides equally. The 4116 steel is deliberately not extremely hard, making it possible to restore a sharp edge in minutes. Do not sharpen serrated bread knives yourself. See Care & sharpening for more detail.
Wooden or plastic handle: which should I choose?
Plastic handles (Pro and Classic) are lighter, easy to maintain and hygienic, which is why butchers and professional kitchens use them. Pro has a seamless moulded handle; Classic has the traditional three-rivet handle. Wood (Yöresel) feels warmer, follows the traditional Sürmene design and makes an attractive gift. It needs an occasional drop of oil and must never be left soaking. The blade steel is the same across all three ranges.
Which knife is for which task?
Kitchen knife, 13 or 15 cm: vegetables, fruit, chicken and everyday cutting.
Butcher’s knife, 14 cm: boning, trimming and removing sinew and fat.
Butcher’s knife, 20 cm: portioning large cuts, leg of lamb, kebab and barbecue meat.
Chef’s knife, 20 or 22 cm: chopping, rocking and slicing; hollow-ground versions help slices release from the blade.
Bread knife, 19.5 cm: bread, pide, simit and tomatoes.
Börek knife: börek, baklava, pizza and lasagne with one downward press.
Fruit knives: peeling and the breakfast table.
Unsure? Start with the Starter Set: a kitchen knife, 14 cm butcher’s knife and bread knife.
Can I choose the fruit knife set colours?
No. The six-knife set arrives from the factory with varying handle colours. We send the set available in stock; colours are random. The blade and steel are the same for every colour.
Is a Sürmene knife a good gift?
In Sürmene, knives have traditionally been given at weddings, for a new kitchen and before military service. The wooden-handled Yöresel range and Yöresel Gift Set suit these occasions. Leave a note at checkout that it is a gift, and we omit price information from the parcel and can send it directly to the recipient.
Do you supply butcher shops and restaurants?
Yes. We offer volume pricing from 10 pieces and invoices with VAT details for butchers, kebab shops, restaurants, caterers and bakeries. Email your business name, VAT number and the knives you use for a price list. Trial sets are also available on request.
How are the knives packed and shipped?
Each blade receives a protective sleeve and is packed in a sturdy cardboard box with filling to prevent movement. The contents are not described on the outside. Unpack carefully and remove the sleeve only once you are holding the knife securely.
