Anatolo Yöresel

This knife, up close.

A bread knife in the Yöresel design: a laser-ground 19.5 cm serrated edge and a wooden handle with bolster. For sourdough, ekmek, pide, simit and anything with a crust; also useful for tomatoes and watermelon. A knife you can leave on the breakfast table.

The Yöresel range follows the classic Sürmene design: a wooden handle with a steel bolster and three rivets, and a blade made from German 4116-grade stainless knife steel (approximately 55–57 HRC), bearing the TSE mark. “Sürmene Bıçağı” has been a protected geographical indication since 2018.

Wash by hand

Use a little washing-up liquid, then dry straight away. Do not soak it or put it in the dishwasher.

Cut on wood or plastic. Avoid glass and stone, which are hard on the edge.

Which knife should I start with?

A chef’s knife is versatile for vegetables, herbs, meat and fish. Prefer a smaller knife? Choose a 13 or 15 cm utility knife. A bread knife is a separate choice for firm crusts.

How do the three lines differ?

Pro has a seamless moulded handle. Classic has a synthetic handle with three rivets. Yöresel combines wood with a steel bolster. Check blade lengths too: these can differ between lines.

Can my knife go in the dishwasher?

No. Wash by hand and dry straight away to look after the edge and handle. Do not leave wooden handles soaking in water.
