Anatolo Classic

This knife, up close.

The same laser-ground 19.5 cm blade as our Pro bread knife, with the classic riveted handle. Its even serrations cut through crust, pide, simit and tomatoes without tearing. For anyone who prefers the traditional design or already owns knives from the Classic range.

The handle is fixed to the tang with three rivets, a design used in Turkish butcher shops for decades. Slightly heavier than the Pro range and well balanced.

The blade comes from Sürmene (Trabzon), the knife-making town on the Black Sea with a protected geographical indication since 2018. German 4116-grade stainless knife steel, approximately 55–57 HRC, with the TSE mark.

Care: wash by hand and dry immediately. There is no need to sharpen the serrations yourself; the laser-ground teeth stay sharp for a long time. Do not put in the dishwasher.

Wash by hand

Use a little washing-up liquid, then dry straight away. Do not soak it or put it in the dishwasher.

Cut on wood or plastic. Avoid glass and stone, which are hard on the edge.

Store your knife with its edge protected. Occasionally treat wooden handles with food-safe oil.

Which knife should I start with?

A chef’s knife is versatile for vegetables, herbs, meat and fish. Prefer a smaller knife? Choose a 13 or 15 cm utility knife. A bread knife is a separate choice for firm crusts.

How do the three lines differ?

Pro has a seamless moulded handle. Classic has a synthetic handle with three rivets. Yöresel combines wood with a steel bolster. Check blade lengths too: these can differ between lines.

Can my knife go in the dishwasher?

No. Wash by hand and dry straight away to look after the edge and handle. Do not leave wooden handles soaking in water.
